Market Fresh Recipe: Greek Frittata

A breakfast treat featuring classic Greek flavors.

A frittata is one of my favorite breakfast treats. It's an egg-based treat, similar to an omelette or quiche, made with different ingredients ranging from vegetables to meat and cheese.

For this incarnation, the frittata is made with classic Greek flavors, like olives, fresh spinach, cherry tomatoes, and feta cheese, with farm fresh eggs—all available at the . To "health" up the recipe, a mixture of half whole eggs and half egg whites is used.

This Greek Frittata is the perfect breakfast treat. Serve it with a side of fresh arugula tossed with olive oil and lemon juice. Enjoy!

Greek Frittata
Serves 4 people
Cooking time: 20 minutes

Ingredients

  • 3 whole eggs and 3 eggs whites
  • 1/2 cup red onion, chopped
  • 1/4 cup cherry tomatoes
  • 1/4 cup Greek black olives without pits
  • 2 tablespoons feta cheese
  • 2 tablespoons extra virgin olive oil, plus more for drizzling
  • Salt and freshly ground pepper

Directions

  1. In a small 8-inch frying pan, heat the olive oil over medium heat.
  2. Add the onions and saute until beginning to caramelize (about 5-7 minutes).
  3. Add the spinach and quickly wilt it. Season with a little salt and pepper.
  4. Add the egg mixture to the pan. Top the eggs mixture with the cherry tomatoes, placing them cut side up, and the olives. Sprinkle with feta and drizzle with olive oil. Season with salt and pepper.
  5. Continue to cook for a few minutes until the frittata begins to set.
  6. Transfer the pan to the oven and cook under the broiler until the eggs are fully cooked (the top will puff up a little).
  7. Allow to rest for five minutes before cutting into four pieces.
